We commonly peel our bananas, eat them and throw away the skin but, have you stopped for a second to think if it can be eaten? Banana skin is not hard and is also edible. This is a creative way to reduce food waste.
Approximately 60% of the skin of bananas is made up of carbohydrates, 30% fiber, water, and small amounts of protein and fat. It also contains many minerals such as potassium and magnesium. Sometimes the skin of the banana tends to be a bit bitter, but it is edible. We should try adding the skin to a smoothie or yogurt for example.
Scrape the pulp from the skin of the banana peel with a spoon until the peels will be quite thin. Discard the pulp. Cut into strips.
In a small bowl combine all of the marinade ingredients until combined. Coat them with the marinade and let them sit in the fridge for at least 20 to 30 minutes.
There are 2 ways to cook the peels: in a pan or in the oven.
If you want to make them in the oven, preheat them to 350°F (180°C). Transfer the bacon to a baking sheet lined with baking paper and bake for 20 minutes or until golden brown. Turn the peels and bake again for another 20 minutes, until the bacon is dark brown (typical bacon color), with a little crispiness at the edges.
If you prefer to make them in a pan just add banana peels to the pan and cook over medium-low heat. Flip them occasionally until golden brown. Remove from skillet and serve immediately.
Serve crumbled into salads, with some waffles or pancakes and eggs, into your favorite sandwich or whatever you can think of, and just enjoy its flavor.
